2 tbsp. XV Olive oil
120 g Arborio Rice
1 large Handful Champignons, sliced
1 sprigs Thyme
1 pc Bay Leaves
¼ Onion, finely chopped
1 Garlic clove, finely chopped
100 ml White Wine
375 ml. Chicken Stock (or Vegetable stock)
40g Butter
40g Parmesan, Grated
Freshly Chopped Herbs (Parsley, Tarragon, Coriander)
1 tbsp. Truffle Oil
Salt, Pepper
